It is hard to believe that summer is almost over. The malicious school year is creeping around the corner, and soon we will have shorter days, brisker weather (well, I am praying!), and the care free summer attitude will be gone until next year. Happy Monday! Once again, the weekend was too short! Our little family cruised a few hours north to Dallas to spend some much-needed time with some of our greatest friends. Recipe: Parmesan-breaded Squash
I think I am mentioned it here before, but one of my co-workers (at my day job) has a garden overflowing with summer squash. I am so fortunate that she brings me her leftovers to devour.
