Brussels Sprouts and Butternut Squash Salad

October 31, 2014

Brussels Sprouts and Butternut Squash Salad

Happy Halloween! First off, look at this little nugget.  Since he has has multiple Halloween events this week, he has gone between being a fireman and an "inja."  Goodness.  I could eat him up.  This is my favorite Halloween picture so far...the bunny doesn't look nearly as thrilled as I was. . . .

Carrot Ginger Dressing

September 22, 2014

Carrot Ginger Dressing

I don't know about you, but every time I eat in a Japanese restaurant, I can't get enough of the orange Carrot Ginger Dressing that gets poured on my pre-sushi salad.  I could eat my weight in it, I swear. Since I love it so much, why was I only allowing myself to have it every once in a while?  Enter this recipe. Carrot Ginger Dressing is a sweet and tangy dressing that livens up the simplest of salads.  I just throw it on chopped romaine, sliced cucumbers, and some . . .

Peach and Prosciutto Salad

August 12, 2014

Peach and Prosciutto Salad

I told you I was on a salad kick, and this one uses one of my favorite summer seasonal ingredients: peaches.  Here in the Texas Hill Country, the peach reigns supreme in summer months.  I challenge you to drive down any Farm to Market road and not see at least three peach stands.  Do other states still have Farm to Market roads?  As I typed that, it seemed a bit strange.  Well, in Texas, we still do. Caprese Panzanella Salad

Caprese Panzanella Salad

This recipe is a crowd pleaser.  Beautiful tomatoes, basil, marinated mozzarella, and delicious bread make this version of a panzanella salad very special. I don't know if I think any produce is as beautiful as multi-colored, fresh cherry tomatoes.  This salad puts them on display. This recipe, which the idea actually comes from my beautiful friend, Megan, pairs a traditional panzanella bread salad with a much-loved caprese salad. Your friends and family will love this . . .

Recipe: Grilled Zucchini, Onion, Tomato, and Feta Salad

As you can see, it is definitely squash season.   I am so lucky that a wonderful co-worker of mine has a garden overflowing with summer squash, zucchini, and cucumbers. Summer squash is very versatile.  You can grill it, roast it (see my zucchini lasagna recipe here), saute it, or eat is raw.  With it's low cost and abundant availability, it is a no brainer for summer cooking. Recipe:  Grilled Zucchini, Onion, Tomato, and Feta Salad serves 6 as a side . . .
