Shaved Brussels Sprouts Salad

Happy Friday!

First of all, thank you so very much for all of our amazing feedback on Tuesday’s “getting personal” post.  You guys are seriously the best.  Your encouragement and the fact that you too shared your personal experiences with me here and on Facebook made my day.  I am sincerely touched.

Now, onto today’s recipe!  This may be one of the simplest and most delicious salads I have made yet.

Meet the Shaved Brussels Sprouts Salad with Pancetta, Dried Cranberries, and Slivered Almonds.  Yum.

I love a warm salad. Warm salads can wear many hats…a satisfying side, a memorable appetizer, or even a full meal.  This is a great one!

Recipe: Shaved Brussels Sprouts Salad

2 tbsp (or more) extra virgin olive oil
One bag or 3 cups shaved brussels sprouts (or throw the brussels in your blender and pulse a few times)
3 ounces diced pancetta
1/2 cup dried cranberries
1/2 cup slivered almonds
Sea salt and freshly ground pepper, to taste

Directions


Saute the diced pancetta on medium heat in a large skillet.  When the pancetta is starting to brown, throw in the shaved brussels sprouts.  Stir a few times.  Add in the olive oil.  You may need more than 1 tablespoon depending on how much fat you rendered from the pancetta.  You need just enough to give the brussels sprouts enough fat to evenly saute in.  Saute for about 5 minutes until the brussels are starting to soften.

Add in the cranberries and almonds. Stir and saute for 2 or 3 minutes more.  Add some salt and pepper, and you are done.

Yep.  That’s it.
