Butternut Squash Cassoulet

A rich, slow-cooked casserole originating in the south of France, cassoulets are a dish beloved by generations of French cooks.  These rustic and flavorful dishes usually contain white beans and an assortment of meats.  Depending on the cook, you may find any variation of lamb, pork, or chicken in a cassoulet.  
 
With fall weather FINALLY making an appearance, I crave fulfilling warm dishes for dinner.  A cassoulet definitely fits that bill, and this one is extra special.  And what makes this dish even better, there is no potatoes, gluten or dairy in it, and, seriously, you won’t even miss it!  Combining butternut squash, sausage, and chicken, it is the perfect fall meal.
 
The only thing is, it is not one to do after work.  This is definitely a weekend meal…it has a bunch of steps…and, to get a cassoulet truly perfect, you really need some time to let it cook in the oven.
