As far as crowd-pleasing appetizers go, you can ‘t really fail with a good, creamy Spinach Artichoke Dip. This one is especially decadent because it uses cream cheese as opposed to mayo. It’s divine.
And what is even better, all you need to do it mix it all up together and throw it in the oven. People will definitely be talking about this one the next day. I served this with Trader Joes’ Quinoa Chips, but this would be amazing with a toasted baguette or even crisp veggies.
Recipe: Creamy Spinach Artichoke Dip
1 14-ounce can or 1 cup coarsely chopped artichoke hearts (you can use jarred, as well)
1.5 cup chopped fresh spinach
3 cloves of garlic, minced
1/2 cup chopped red onion
1/2 cup sour cream
4 oz. softened cream cheese
2 tablespoons milk
1 cup shredded mozzarella cheese, plus a bit more for topping
1/2 cup grated parmesan cheese
1/2 teaspoon garlic salt
1/8 teaspoon pepper
Directions:
Preheat the oven to 400ºF.
Combine all the ingredients in a bowl and mix until well combined.
Pour mixture into a greased 8×8 inch square pan and sprinkle extra mozzarella on top.
Bake for about half an hour until until bubbly and golden.
