Quick Recipe: Pesto Drumsticks

This recipe is perfect for a quick weeknight dinner or even for your upcoming Halloween soiree!

Recipe:  Pesto Drumsticks

6 – 8 chicken drumsticks with the skin on
2 – 3 TB of softened butter 
1 cup of pesto (store-bought or homemade)
Non-stick cooking spray


Directions
Preheat oven to 425 degrees. Wash drumsticks under running
water and make sure you pat dry with paper towels.
Slide your fingers underneath the skin to loosen it up a bit
without tearing it off. Take the softened butter and smear underneath the
skin of each drumstick.  Do the same with
the pesto.  Smear the pesto on the top
and bottom of each drumstick as well. 
You want each drumstick to be covered with pesto.
Cover a cookie sheet with foil.  On top of the cookie
sheet, place a cooling rack (or any other baking rack that will fit in the
cookie sheet).  Make sure there is a good coating of non-stick spray on
the rack.  Place drumsticks on the cooling rack with the thicker part of
the drumstick to the outside. A rack elevates the chicken to help all sides
cook evenly. 
Cook 35 to 45 minutes to at least 185 degrees internal temperature.
Make sure you reach 185!  Let set for 10
minutes before serving.
