Investing in good quality ingredients is critical to the success of any meal, but I think it is especially critical with meat. Like I have said before, I think it is beneficial for home cooks to know where their ingredients are coming from. In addition, you want to be able to discuss your needs and wants with your butcher, so you should be on the same page and should know — at least relatively — what you are looking for.
