Sweet Potato Chips

This is an easy one.  So very easy.  I am always looking for new ways to make simple, healthy snacks for me and the little man.  I had an abundance of sweet potatoes and a healthy appetite for snacks, so I thought I would give these a try.  I am so glad I did!

A do have a few tips before you start slicing up your sweet potatoes.  I used a sharp knife to slice, but if you have a mandolin, use that.  This recipe works much better when the sweet potato slices are truly uniform.  I found that I liked the chips that were still a little soft in the middle.  This will be trial and error for each person.   These are something to make over the weekend when you have some time.  The prep time is easy breezy, but they need to cook for 2 hours.
